Getting Creative with Tofu in a Greek Kinda Way…

Years ago I received a recipe card pack from some people who ran a health center that was totally vegan. There were quite a few recipes they made during the week I was there that were quite tasty, but my very favorite one was a “Greek” Salad made with tofu. I don’t know what it is or why – but I will crave tofu. Tofu on it’s own has absolutely no flavor and is disgusting. But put it with other food and it becomes delicious.

Today I will share with you the Marinated Tofu that is used in the Greek Salad recipe. Naturally, the tofu is replacing the feta cheese in this recipe and it is marinated in a dressing that you spoon over your salad along with the tofu. Yum!

Greek Salad

Dressing:
1/2 cup olive oil
1/4 fresh squeezed lemon juice
2 teaspoons salt (I used sea salt)
1 teaspoon basil
1/4 teaspoon cumin
1/2 teaspoon oregano

Pour dressing over:
1 lb. tofu cut into 3/4″ cubes

Marinate at least 1 hour, stirring occasionally.

For the Salad:

Wash, core & cut into wedges – 3 fresh tomatoes. Add some slices of red onion and thin sliced cucumber, and 1 cup greek or black olives.

Serve on a bed of lettuce. Makes 6-8 servings.

    I forgot about this recipe that you mentioned once to some of your c.f.. I meant to try it then, and I think that I will now, as I love greek salad-flavors. Do you think it would be worth it to press the tofu first? – Edlear

    Hi Edlear – you don’t have to press the tofu and the original recipe doesn’t tell you to – however, I did press it for about 30 minutes myself. I forgot to note that in my blog!

    LOL, Cathy – it didn’t get past Grumpy. This is one food I don’t mind keeping to myself. I did try to get him to try a piece, but he said no. I didn’t mind too much because I love it so much. The kids all tried a piece though! My kids will eat about anything I make and Sam thought it tasted like Cheese. Hmmm I wonder WHY?! Grumpy got a special dinner when I made this – so he didn’t complain….the post for that is going up tomorrow. :)

    This sounds great–something I would definitely make. I don’t know how “tofu-flavored” your “cheese” had, but it can also help to press the tofu to let all the liquid run out before marinating it. That’s something I do to make it more believable as something else to those that don’t enjoy tofu as much as I do!

    I have yet to cook with tofu, someone just gave me some and I don’t know what to do with it! I may have to try this! It looks so flavorful marinated like that!
