Today is my oldest son Justin's birthday (also Saritor contributor here on L&L of GHB). We will be getting together this evening and of course there is a special treat involved. My boy is 24 years old today. Happy Birthday Justin! Mom loves you!!

Yes, this is pretty, and this is good, but Grumpy wouldn't eat it. Have any ideas as to why? Because I used wonton wrappers and it was crunchy. Sure, it would be good with filo dough, or even baked pastry rounds. But I liked it anyway. The filling? If you love sweet lemony tang - you will love the filling!
HoneyB's Raspberry Lemon Love Tarts
6 wonton wrappers
spray butter
sugar crystals
Preheat oven to 350. Place wonton wrappers on cookie sheet and spray with butter spray. Sprinkle with sugar crystals and bake for approximately 10 minutes (or until wontons just start to turn brown on the edges).
4 Tablespoons Oikos Organic Greek Yogurt (Vanilla flavor)
4 Tablespoons lemon curd (I do make my own, but you can buy this in the store)
1 pint red raspberries
Blend yogurt and lemon curd together. Spoon mixture over bottom layer, layer raspberries, repeat layer one time then top with remaining wonton wrapper.
Note: This isn't too easy to eat with a fork if you make it and want to immediately eat it. I suggest you eat each layer separately. :-D At least, that is how I did it!
