I couldn't let this week of Cooking Light pass me by without posting this yummy Pumpkin Cheesecake! I actually made this cheesecake right after Thanksgiving. Since I didn't host Thanksgiving, we didn't have anything here at home for leftovers. So, I made our own little turkey dinner and dessert! This was yet another dessert that Grumpy had a hard time leaving alone. It took him a little more than a week, but he ate all but one piece! He chastised me for making him save Chris a piece, then when Chris was here he forgot about it! However, even the piece he left for Chris wasn't very big. He would probably not be happy that I am telling everyone he is eating almost whole desserts all by himself. LOL. He rarely reads this though (I think) so I have little to worry about.
