Pumpkin Cheesecake and Day 5 of Cooking Light giveaway

I couldn't let this week of Cooking Light pass me by without posting this yummy Pumpkin Cheesecake! I actually made this cheesecake right after Thanksgiving. Since I didn't host Thanksgiving, we didn't have anything here at home for leftovers. So, I made our own little turkey dinner and dessert! This was yet another dessert that Grumpy had a hard time leaving alone. It took him a little more than a week, but he ate all but one piece! He chastised me for making him save Chris a piece, then when Chris was here he forgot about it! However, even the piece he left for Chris wasn't very big. He would probably not be happy that I am telling everyone he is eating almost whole desserts all by himself. LOL. He rarely reads this though (I think) so I have little to worry about.

Although this cheesecake is PLAIN it is very yummy and creamy. The recipe for the cheesecake can be found HERE.

    I missed out on the pumpkin pie/cheesecakes this Thanksgiving since my kids aren't pumpkin eaters. I'm craving pumpkin!

  3. I'd have to say that pumpkin cheesecake is my favourite cheesecake and Grumpy can be comforted by the fact that this is a Cooking Light recipe since he is eating the whole thing:D

    A few years ago my MIL told me NOT to bring cookies to Christmas anymore. She said Christmas was HER holiday to make cookies and mine were not needed.
    So, I show up to Christmas Eve empty handed now...

    Megan - yes, I did have some, but not even a whole piece. I try not to eat a lot of sweets myself even though I LOVE to bake them. If I get into it I have a hard time stopping! Kinda like Grumpy :o)
