Spaghetti & Meatballs – Rachel Ray Recipe

Now, lets talk about last night’s dinner…..

Growing up I did not like pasta. I don’t know if it was the pasta or the sauce, but I wanted nothing to do with it. Meatballs were ok, but I wanted them by themselves or not at all. Over the last 5 years I have changed. Pasta has become something I love and pasta sauce? I can’t get enough. I love all kinds of sauces, tomato, cream, peanut, butter garlic? I’ll take it please!

I had decided it was time to make spaghetti and meatballs. Since I have never made a Rachel Ray recipe I decided I would try hers. The reviews were really great so I figured I had a super winner. I hate to say I was disappointed. While it was good it was not the best I have ever had and I don’t get how it has a 5 star rating. The pasta sauce I was not happy with. I immediately knew it was going to be “runny” and Grumpy would not like it. I was going to use tomato paste to thicken it up but was out so I added a can of tomato sauce and simmered the sauce until it had thickened some. Also, I knew the chunks of tomato were too big for Grumpy so I used my immersion blender and smoothed the sauce out some.

As it stands, right now, my favorite meatball and pasta sauce recipe is Pam’s recipe from For the Love of Cooking and I will stick to that one for now. If you try Rachel’s recipe out, let me know what you thought! You can find her recipe by clicking HERE.

    I add Kraft's shredded 5 Italian Cheese to any tomato pasta sauce I serve. It is a great thickener and adds great flavor. I know Rachel suggests putting her tomato basil soup through the food processor to smooth out the texture….but she must like her sauces chunky.

    I have a couple of spaghetti recipes. I have tried RR's recipes and actually have liked very few. I like her linguine with red and white clam sauce and her sub stoup. That is about it.

    It is so weird that the sauce was too runny. EVERY Rachel Ray recipe I have tried has always needed to be thickened some. I'm glad to know that I am not the only one who finds her recipes runny!

    i love spaghetti plain and i love spaghetti with any sauce you can throw at me. i also love meatballs. spaghetti and meatballs? eh, not a fan. i can't deny how tasty your dish looks, though–i'd definitely give it a whirl.

    I pretty much like pasta, sauce and meatballs no matter what, grins, though I admit that some sauces are better than others. Even my favorite tomato sauce I make at home isn't the best for pasta, much much better in my lasagna or on manicotti, go figure! Still looking for the ultimate sauce to serve with pasta and meatballs.

    Spaghetti and Meatballs is a family favorite at our house- too bad this recipe didn't live up to it's rating, but your photos make it look out of this world good, Shelby!

    Looks really good, glad you have your own way of making things, not a RR fan at all, tried a lemon pasta of hers, it was really horrible…but getting idea's is always the way to go, your pictures are awesome! I would diffinitely love a dish of that!

    I find that RR has a lot of hit and miss recipes. Some are good and some are not so good. I'm sorry you were disappointed, I hate when a great meal like spaghetti and meatballs ends up being a letdown.

    I'm not a huge fan of RR's recipes – at best take a small bit of inspiration from time to time. I still make red sauce the way my Mom taught me and I am realizing that I have never blogged it. I will have to remedy that soon! The club sounds great and I will definitely join!

    I love any type of pasta and sauce as well. I'm trying to replicate my MIL's meatballs and sauce. It's a work in progress. Too bad this one did't turn out like you hoped but it's still fun to try different recipes. You never know when you'll find a new favorite.

    I have tasted great meatballs and spaghetti but I have never made great ones. Sure, they are good but great ….no.

    I will stop by Pam's and get her recipe.
