This month our Cooking Light Virtual Supper Club's theme was "A Taste of Spring". Spring is something many of us are probably longing for right now! As I write this, many people in the east coast are being hit hard with snow, more snow, and even more snow! Luckily, for those of us in my area, we have kind of been bypassed. I hope it remains that way! We have even had temps as high as 40's. It is weird to see everyone else getting the snow when we usually are getting it ourselves!I for one am definitely ready for spring. I'm ready to see the trees and flowers come to life and for the grass to get green.
My choice for our spring meal was Zucchini Ribbons with Saffron Couscous. I personally loved this dish. My son Christopher enjoyed it also. Grumpy though, eh, not so much. But he ate it anyway and didn't continually cry it was horrid. I broiled some spicy shrimp to go with so maybe that placated him some. ;)

ReplyDeleteClaudia, the texture is not really like rice - nor does it taste like it. Its flavor comes from the ingredients in the sauce - it is amazing. I don't care what Grumpy says....You won't be disappointed. Saffron isn't cheap, but is SO worth it!
