Wednesday night is usually our “date” night. Mostly because Grumpy has a late school day and I just meet him in town on the way home and we have dinner together. That is usually all our date night consists of. This week though Grumpy was getting out of classes early so I just came home after work. I hadn’t really planned a meal but knew if we were to eat at home I wanted vegetarian.
I do have a favorite Black Bean Burger and that is the one I was thinking about making. Then I opened the Cooking Light Magazine April 2010 issue and was faced with this Black Bean Burger with a Mango Salsa. I immediately thought I would still make my favorite burger and just try it with the salsa. Then, on my way home from work, I decided it maybe wouldn’t work with the salsa. The burger I like is really flavorful and has corn in it. Somehow I thought maybe corn and mango would not mesh well with me. So, this sandwich you see here is the whole recipe from Cooking Light.
Did it change my love for my favorite burger? No. While this burger was good, it still is not better than my favorite (which by the way has NO eggs in it. The CL burger has egg whites therefore not vegan). The salsa however was pretty darn good. After I took my photos, I disposed of the bun and smothered it in more of the salsa. The burgers are baked and they do crisp up on the outside, but you want to make sure to use a wide spatula when turning them as they will break easily. I also halved this recipe when I made it (except for the salsa) as I knew I would be the only one eating it. I got 3 burgers (which is what you should get per the recipe) and lunch for the rest of the week.
