Crab & Swiss Quiche


Today's entry into the brunch contest was submitted by Carmen.  This is a recipe that her daughter gave her.  Carmen say's that her daughter is a great cook!  This quiche was quick and easy to put together.  The baking was the longest part of the whole recipe :o)

Crab and Swiss Quiche

2 eggs, beaten
½ c milk
½ c mayonnaise
1 tsp cornstarch
½ pound crab
1-1/2 c shredded Swiss cheese
9” unbaked pie crust

In medium bowl, mix eggs, milk, mayonnaise, cornstarch.  Add crab and cheese.  Pour into pie shell.  Bake in preheated 350 degree oven for 3-40 minutes or until knife comes out clean.

Definitely love crab in a quiche. It's sweet and buttery--perfect for creamy eggs.
