Don't let the plain look of these cookies deceive you. They are very, very yummy. So yummy that if I didn't have plans to give some to Kristina for part of her Easter treat....then I may have well eaten every one of them that I made.
Even though my kids are all grown up, I still give them an Easter treat. It probably will always be that way....even if and when I get grandchildren! My boys love the peeps so I gave them both some peeps with a chocolate bunny. I wasn't so sure if I remembered if Kristina would eat peeps so I decided to make her these cookies to go with her chocolate bunny. I was pretty sure that she would like them - especially since there is toasted coconut and chocolate chunks in them!
This is another prize winner from the Cooking Light Magazine April 2010 issue. Toasted Coconut Chocolate Chunk Cookies. The name is fancier than the cookie looks but the taste, well that totally makes up for it! If you would like to make these for yourself you can find the recipe by clicking HERE. ReplyDeleteAww, such a sweet daughter you are! I dont know why these seem to fit in with spring to me, but they do! Normally, I would think of these as Christmas-y. Maybe it's the coconut?
