Chili Cheese Dogs


I was inspired.  By my blogging friend Rachelle ;o)  Speaking of whom - if you haven't been to her blog and entered her cool giveaway from Sunglass Warehouse Store, then make sure you head over there - after your done reading this of course.  ;o)  (don't worry Rachelle, I am going to enter too, I just haven't yet)


Ok, I got a little off track there.  Rachelle inspired me.  To make chili dogs.  On Facebook I ask what's for dinner pretty much every day - and not too long ago Rachelle said she made chili dogs.  I hadn't stopped thinking about them since.  I'm not a hot dog person really, but put some chili, cheese & onion on it, I'll eat it happily.  I made my own chili with ingredients I had on hand.  At first I thought it was spicy enough but after it sat for a day - I don't think so.  I would add more chili powder or a jalapeno or something to the mix next time. 

Chili Cheese Dogs
ala HoneyB

Chili:
1.25 lbs ground beef
1/2 onion, diced
1/2 red pepper, diced
1 can Bush's Beans in Chili Sauce
1 can Rotel Diced Tomatoes with Peppers
2 cups Prego Spaghetti Sauce **
1 tablespoon tomato paste
1 teaspoon cumin
2 teaspoons chili powder (more if you like it spicy)

Hofman hot dogs, preferably grilled (Grumpy says these are the best and I have to agree - since I will eat these and really, I won't eat any other hotdog unless its vegetarian)
Hot dog rolls
shredded cheddar cheese
diced onion

The chili is easy.  brown the hamburger with some onion and red pepper.  Drain any excess fat.  Stir in remaining ingredients and simmer uncovered 15-20 minutes .  Use as topping for hot dogs or enjoy on its own!  I took some to work today, topped with cheddar cheese, warmed up it was nice and gooey on top and delicious!

Assemble the dog as such:
Bun, dog, chili, cheese, onions.  Or mix it up your own way :o)  Grumpy put so much topping on, he had to eat his with a fork.  I ate mine with my hands - I like things dainty and neat - exactly what my chili dog was!

**The spaghetti sauce was because I had no tomato sauce and it is an idea from my DIL Kristina who actually makes the best chili I have had.  I'm not sure if it is Prego she uses when she makes her chili, but that is usually what I buy when I buy sauce.  Maybe someday I can get her to do her recipe for you!

LOL! You goober! Well I'm not blogging about our chili dogs, was nothing as fancy, just chili and cheese no onions. Mr. at about 3 of them! Yours look fab! Thanks for the mention too. =)

Chili Cheese Dogs = Summer Staple! I love Hoffman's dogs. At 3 lbs. for $10.99 they're a great value-

Another superb wiener is/are Zweigels ( out of Rochester). If Grumpy likes Hoff Dogs he'll love these. You can find them at the IGA in Cape Vincent and occasionally at the Big M in Clayton.

I'll be cooking up a bunch of Hoffdogs Friday night for the daughters pr-wedding BBQ

you know i would love these. a couple at least. we eat a lot of those all natural, no nitrates hot dogs from whole foods and i LOVE using baked beans or chili on mine.

My two younger boys discovered chili dogs last week when they went camping with their scout troop. I had been trying for years to get all of my kids to eat them, but to no avail. They go camping once and are hooked. Yours look great!
