Virtual Cooking Light Supper Club thinks fall!

This month Jamie of Mom’s Cooking Club chose our Cooking Light Virtual Supper Club theme and we are celebrating the entrance of fall!  While I love fall foods and can’t wait to eat them – we have not felt like fall at all in our area.  Just yesterday our temps hit 96 and today is supposed to be the same! 

I chose this Butternut Squash dish because I LOVE Butternut Squash!  While I enjoyed this dish I probably would add some butter to the squash and onion mixture before putting it in the oven the next time and use butter in the bread crumbs instead of olive oil.  For some reason I just didn’t get a ton of flavor like I do with other butternut squash/sage dishes that I make and I’m thinking because it was lacking the butter.  If you like blue cheese and you like butternut – you should definitely try the dish!

    I can never decide what I love most about fall, the leaves changing color or all the butternut squash recipes that come out in full force.

    Do you know I have never had butternut squash. Crazy, I know. It's on my "to eat" list this fall. Thanks for sharing this fall side dish. Looks great.

    Oh my!! 96 degrees?! It's getting chilly here in Seattle and I love it!! haha. I actually have never had butternut squash. I see it everywhere in foods though. From ravioli, to risotto and now you're dish. Looks great!

    I love your cooking club. I look forward to your new recipes and you gals do a fantastic job of putting together meals, we all would enjoy.

    I love Cooking Light recipes so this has to be good.

    I'm such a butternut squash fan and am always looking for new ways to prepare it. This does look good and I would never say no to adding a bit of butter to add flavor.
