Shelby's Take on the Bacon, Egg, and Cheese

Its Saturday morning and the weekend is the time I think about breakfast and what I can share with you!  I eat this sandwich, or one similar to it about 2-3 times a week.  I found I can handle just egg whites or the egg product without getting that sick to my stomach feeling.  When I go with just the egg whites or egg product, I'm also reducing the fat and calories in my meal!  Getting bored with the mini bagel?  Go with the Thomas 100 Calorie English Muffin instead.  Love it with those too!  This is a 220 calorie sandwich, so if you feel like another 200 calories mid morning, its not going to hurt you!  I'm sure I'm not the only one who does this - I'm sure there are a lot of people out there that do similar things at home.

I'm on the lookout for some Sundried Tomato Spread.  Love that stuff.  I came upon it at Bruegger's where I stopped in one morning to get a skinny bagel sandwich.  That is what put me on the kick of a breakfast sandwich made at home.  What do you do to make your sandwich different and healthier for you?

Shelby's Take on the Bacon, Egg and Cheese
This is my morning sandwich about 2-3 days out of a week.  Its a great way to get my protien in the morning and to feel like I've eaten enough to feel satisfied.  
Ingredients
  • 1 mini whole wheat bagel 
  • 1/8 cup egg beaters 
  • 1 wedge laughing cow cheese, queso flavored 
  • MorningStar Farms Stripples 
Instructions
Cook Stripples in the microcwave according to package directions.

Heat skillet to medium heat and coat egg ring and pan with non stick cooking spray. Place egg ring into hot pan and pour egg product into egg ring. Cook until egg is no longer wet about 3 minutes.

Meanwhile, toast bagel in toaster. Spread each side of bagel with Laughing Cow Cheese.

Remove egg from skillet and place on bottom half of bagel. Top with stripples and other half of bagel. Enjoy!Tips:  Try other flavors of the laughing cow cheese for variety. You can also use the 100 calorie english muffins in place of the bagel and if you want to cut calories a little more go with only 1 stripple. I tend to like my stripples though so for me its worth the few extra calories!

Something about a bagel with an egg in the middle that strikes up such a craving. I had eggs this Am with 1/4 of a bagel from a delicious bagel shop in town, too good!

I just love Laughing Cow cheese! I haven't seen the queso one yet! YUM
