A whole grain muffin bursting with fresh blueberries and cherries make Berry-Cherry Muffins a satisfying on the go breakfast. They would also be a great choice as a snack to help ward off those hunger pains mid-day!
Many mornings I don't have the time or desire to sit down at the table and eat breakfast before I head out of the house. I'm have a hard time eating as soon as I get out of bed. I am up way too early for that! I have to be up at least 3-4 hours before my mind starts telling me that it is time to feed my tummy. Usually about a half hour after arriving to work is when I start feeling those hunger pains.
Since the beginning of this year I have been keeping track of my nutrition intake. I like to plan my meals ahead of time and know what I will be eating throughout the day to make sure I'm getting enough protein, fat, fiber, and carbs to stay on an even balance. I want to feel as healthy as possible and wear a fit-bit to keep track of my exercise daily.
When I heard about Dole's Get up and Grow Tour I was drawn right in. I was even more excited when I heard that their tour was going to be coming to the Albany area from July 23-26! Dole is challenging Capital City residents to take the Healthy Eating Pledge for a chance to be rewarded with free produce and a California wellness vacation! How exciting is that? I would love to take Grumpy with me and head off to sunny CA for a wellness vacation!
I signed right up for the challenge and to honor my pledge I made these whole grain blueberry and cherry filled muffins and shared them with Grumpy for breakfast. These went perfect with a glass of Blue Diamond Almond Milk who happens to be a co-sponsor of this tour.
I plan to visit the Get up and Grow tour this weekend, sample some new recipes, have some fun and buy some fresh produce. Are you willing to take the pledge? - 1-¾ cups white whole wheat flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1-½ cup DOLE fresh blueberries
- 1-½ cup DOLE fresh cherries, quartered
- ¾ cup sugar
- 1 cup light sour cream
- 4 egg whites
- ½ cup canola oil
- 1 teaspoon vanilla extract
- Preheat oven to 350 degrees. In a large mixing bowl, place flour, baking powder, baking soda and salt. Stir to combine. Add blueberries and cherries. Toss until coated with flour.
- In another mixing bowl, combine egg whites, sour cream, canola oil, and vanilla extract.
- Pour wet ingredients over top of dry ingredients an stir until just moistened. Scoop ¼ cup of dough into paper lined muffin tins. Bake at 350 for 15-18 minutes.

I am horrible about breakfast. It has to be staring me in the face or I don't have any. These muffins would be perfect to keep in the freezer. Love all the fresh fruit.

Blueberries and cherries together sounds good! So smart to plan ahead and have these ready to grab and go. Planning ahead what to eat is always my challenge.
