I saved Nature Nate’s product for last. Mostly because this is a very heart wrenching topic for me and such a very special post. With October being breast cancer awareness month, a few bloggers are sharing with you their connection to breast cancer awareness as well as joining their initiative to bring awareness at Honey Gives Hope.
I had never had Nature Nate’s honey before I was selected to be in this group to share with you for Choctoberfest. When I received the package, I immediately broke it open to give it a try and was very impressed! In reading about their product, I found that they test every batch of their honey for pollen count as well a clean read for pesticides, antibiotics, and corn and rice syrup adulteration. Breast Cancer Awareness is very important to me. Back in the 70’s, when I was just 13, my Dad’s sister was diagnosed with breast cancer. For a 13 year old to hear that, it was a very scary thing. My Aunt Bonnie passed away in 1983, less than 10 years after her diagnosis. It is in her memory that I am writing this post and encouraging you to join in with Nature Nate’s #HoneyForHope Initiative.

- ⅔ cup unpopped popcorn kernels
- ½ cup butter
- 1-1/2 cup honey
- 1 teaspoon vanilla
- 2 ounces dark chocolate, melted
- fleur de sel
- Preheat oven to 325°. Put popcorn in a large roasting pan. Line a large baking sheet with waxed paper.
- In a medium saucepan over medium heat, using a wooden spoon, stir together butter, honey, and salt until butter is melted. Increase heat and bring to a low boil. Boil honey mixture gently for 1 minute, stirring constantly. Stir in vanilla.
- Carefully pour honey mixture over popcorn in roasting pan and stir to coat. Bake popcorn, stirring every 5 minutes, until deep golden all over, about 20 minutes.
- Let popcorn stand 5 minutes until it is cool enough to handle. Working quickly with lightly buttered hands, press small handfuls of the mixture into 1½-in. balls, If mixture starts to harden too quickly while shaping balls, return it to oven for about 45 seconds to soften.
- Let popcorn balls cool completely. Drizzle with melted dark chocolate and sprinkle with fleur de sel.
- Store in an airtight container at room temperature for up to 2 weeks.
