I like to simplify meals when I'm busy by using my own pre-made frozen foods. When I have a day that I know I have lots of time, I will make tons of food, like make burger patties, sauces, cookie dough, etc etc, and then freeze them. I never microwave the meals after since you lose all of the nutrients, but only make food that I can heat upon the stove top or cook in the oven. It makes it way easier for me on a busy day to just yank it out of the freezer and transfer to a pot or the oven!

I simplify by making double batchs of things I know freeze well for those busy nights when I have no time to cook. I also freeze cake layers for a quick dessert when needed. The all you have to do is make the frosting. Thanks for the chance.

I work 10 hour days - 5 days a week, so I'm all about quick and simple meals. I simplify by planning ahead. There are always frozen meatballs for spaghetti or sandwiches. Also, shredded chicken in the freezer for tacos, burritos, salad, or BBQ sandwiches. Sunday is always Crockpot Sunday.

When I'm super busy, or away from the house for the day, my crockpot is my best friend. I use it year round and have adapted MANY of my recipes to work in the crockpot.

I like to cook a big batch ahead and then freeze individual sized dinners or dinners for two as needed. Also, I try to buy things that need a few items only, a coworker sells Tastefully Simple so I like to have some of their mixes on hand for chips or veggies.

Usually when I plan mymeals, I try to make more than one meal out of it, which isn,t too difficult since we are empty nesters. If I plan roasted chicken for one night , I,ll make chicken salad or chicken and rice later in the week. And I always save the chicken carcus for stock. If it's roast and potatoes and carrot one night, it becomes roast beef sandwiches for lunch or dinner later. I also freeze left overs for quick meals another day. When we make BBQ pork, I make larger quantities and freeze. Same with chili.

If we're having rice with a meal, I'll make extra to have for fried rice the next day. And sometimes I resort to packaged sauces, e.g. kung pao, curry pastes. But I still can't bring myself to buy pre-chopped veggies.
