3 Ingredient Cauliflower Spanish Rice is a quick and easy recipe you are going to love for those busy nights! Ready in under 20 minutes and full of wholesome flavor, it is a lower carbohydrate alternative to my Mom’s Spanish Rice substituting cauliflower rice for regular rice.Mom’s Spanish Rice recipe is one of my favorite comfort foods. While I love this dish, I also love to eat healthier and to find substitutions for ingredients that will be quick, better for you, and delicious. A meal that we can sit down to that doesn’t taste like you took shortcuts, but you did!
I started brainstorming for a way to make my Mom’s Spanish Rice recipe healthier. Her recipe is not bad for you, but with rice in the ingredient list, it lends to a lot of carbohydrates. I wanted a way to replicate that comfort food feeling. Using cauliflower rice in place of regular rice was my first step!
The 3 ingredients I used in this recipe are pictured above. To replicate my recipe you will need Wholesome Pantry Ground Chicken, Wholesome Pantry Steam in Bag Riced Cauliflower, and Frontera Chipotle Salsa. All of these ingredients can all be found right at ShopRite.

When I was a child, our family tradition was to sit around the table together for our evening meal. My mom was a stay-at-home mom who took care of our household and provided us with our daily nutrition. Spanish Rice was one of those recipes that we all loved to enjoy.
Enjoying new Family Traditions with Grumpy
Now when my Hubby, Grumpy and I are home together in the evening, I love to provide us with a meal that we can enjoy together. Meal prep time is my favorite time of the evening.
This is where Grumpy hangs out at the kitchen island and we chat as I am preparing our dinner. It is one of the only times during the week we have to actually talk with each other.
This recipe was so easy, that Grumpy didn’t have to lend a hand while I was preparing it. He was skeptical when I told him that it was only 3 ingredients, however, I assured him that he would not be disappointed.
He was concerned Frontera Chipotle Salsa would not work as my sauce. I, however, knew it would be a perfect pairing for the ground chicken and cauliflower rice. With premium ingredients and authentic flavor, you can’t go wrong. One taste of the salsa on the spoon was enough to convince him that it was going to be a good match!
I am so happy that I discovered this quick and easy 3 Ingredient Spanish Cauliflower Rice with Chicken recipe! It will be a welcome addition in our meal rotation going forward. Great for those nights when you don’t want to dirty a lot of dishes just to make dinner.

- 16 oz Wholesome Pantry Organic Ground Chicken
- 12 oz Wholesome Pantry Organic Steam in Bag Riced Cauliflower
- 16 oz Frontera Chipotle Salsa
- Salt and Pepper to taste
- Heat large skillet over medium heat. Add ground chicken and break up into smaller pieces. Cook until chicken is no longer pink, about 5 minutes. Add salt and pepper to taste.
- Add Riced Cauliflower to ground chicken. Cover and let cook for 2 minutes.
- Remove cover and break up any chunks of riced cauliflower, stir to combine with chicken. Cover and cook for 3 more minutes.
- Remove cover and add salsa to chicken/cauliflower mixture. Stir to combine. Replace lid on skillet and simmer 5 minutes.
- Serve warm with fresh herbs if desired.
